As it sits on your tongue, it evolves into nougat, almond, and caramel with a creamy chocolate finish, bringing all the components of a snickers bar. Whether you’re looking for a coffee akin to The Answer, or something more adventurous, you can’t go wrong with Wilson’s coffee. This is a fun one, and not a coffee to miss.
This is the fifth year in a row we have worked directly with Wilson Morales to offer his coffee, and his third year as part of our Best Friend’s Club partner initiative. Each year more of Wilson’s coffee plants have hit the prime of their production, and we are consistently blown away by the ever-improving cup quality. This coffee comes from the farm of Wilson Morales, Finca Aurora, located at 1,580 masl in the Santa Barbara region of Honduras. Along with his love for coffee, Wilson is deeply passionate about the preservation of trees native to Honduras, spending most days as an arborist for the National Forest Service. This passion is evident in the way he carefully plants endangered trees alongside his coffee, so that the two can grow together and mutually benefit each other, creating a healthy ecosystem throughout the farm. Wilson dreams of one day moving his family away from the bustling city and settling on the farm to live alongside the coffee and native plants he has so caringly curated.

The Santa Barbara region of Honduras is a mountainous landscape in northwestern Honduras. Wilson’s coffee comes to us from an area of the mountain called El Cedral, and his position on the mountain makes it an ideal place to grow coffee. On either side of his farm are the farms of William Guzman, Damian Chavez, and Benjamin Paz! William Guzman has an exclusive partnership with our friends at Dune Coffee in Santa Barbara, CA and Damian Chavez is another Cat & Cloud Exclusive relationship coffee. When we visit, it feels like a little slice of home away from home.
Processing method: Washed
Washed Coffees in Honduras are first de-pulped to remove the fruit from the seed. Next, a fermentation process is used to remove any remaining mucilage. After the mucilage is removed, the coffee seeds are washed and then laid out to dry on cement patios. You can expect washed process coffees to be clean, bright, and of a sparkling quality.
