As the seasons change, we look forward to highlighting coffees from different regions within Colombia. Cauca is located to the west of Huila, and just north of Narino. Its proximity to the Pacific Ocean brings perfect levels of moisture rolling through the high-elevation farms. Meanwhile, the black volcanic soil provides the foundation for fertile land full of rich nutrients. It’s against this backdrop that Colombian farmers produce some of the world’s best coffee.
Our VIP growing this coffee is Carlos Trujillo. Located around 1700 masl, his 12 acre farm, Finca Patio Bonito, grows mainly Castillo, Colombia, and Pink Bourbon varieties. The coffee tastes intensely of Bing cherries upfront, followed by hints of mango and other tropical fruit, and ends with a clean finish, leaving the drinker with a lingering honey sweetness.
