This is the third year in a row that we’ve been able to feature coffee from our friend Carmen Canchala. A third-generation coffee and sugar cane grower, Canchala’s farm Finca La Hoya is located in the Andean municipality of Ancuya. The farm itself is located about 2000km from Canchala meticulously cared-for home where she dry mills her coffee. 

Canchala goes to great lengths to ensure that her coffee is grown and milled in the best possible environment. She does not use any pesticides in her growing process and even ensures that no animals or vehicles are allowed near the farm to minimize pollutants. The Finca La Hoya is a sparkling reflection of the environment it’s grown in. Bright, rich, and enticing, this coffee is packed full of sweet citrus and rich dark chocolate.

Brew Recipe

To get the best out of this coffee we always recommend this recipe as a stating point

  • Brew with a 1:16 ratio (one gram of coffee to every 16 grams of water).
  • Get your Water as HOT as you can.
  • Adjust your grind for a 3-4 minute brew time. (The finer the grind, the longer it will take to brew)
