We bought our first natural-processed Costa Rican coffee in 2017 and have gladly offered these sweet, clean, and fruity coffees from the West Valley every year since. The Don Sabino Micromill was established in 2011 by Steven Vargas and his father, and although the mill is young, the two have a lifetime of coffee experience. The mill is within walking distance of the family home allowing the coffee they produce to be meticulously quality checked and given an incredible amount of care and attention

For a long time, the Don Sabino Micromill worked exclusively in Naturally processed coffees, like the one we’ve added to our menu. Fragrant and sweet like a bouquet of roses, the Finca La Roca draws you in with its aroma. The first sip opens up with juicy blackberries and the tartness of Meyer lemon before settling into the palate with syrupy sweetness and the soft tang of rhubarb. This coffee is perfect for anyone looking to dive into their first naturally processed coffee.

Brew Recipe

To get the best out of this coffee we always recommend this recipe as a stating point

  • Brew with a 1:16 ratio (one gram of coffee to every 16 grams of water).
  • Get your Water as HOT as you can.
  • Adjust your grind for a 3-4 minute brew time. (The finer the grind, the longer it will take to brew)
