We have kicked off each year with the Las Sonajas since 2015 when our three owners visited their friend Luis Pedro Zelaya Zamora at his farm Bella Vista coffee mill and fell in love with its deep yet approachable profile. Las Sonajas is a collaboration of 16 separate producers who grow coffee 1,700 meters up the side of the Agua Volcano just outside of Antigua. The Hunapú producer group is a collection of producers known to produce some of the best coffee in the region. 

Las Sonajas delivers the best of the classic flavor profile often seen in coffee from Antigua. It opens with juicy tangerine and sweetness that evolves into a deep, rich baker’s chocolate. This washed coffee has a medium body that leaves a creamy caramel on the palate, excellent for anyone whether you like your coffee black or dressed up with cream and sugar.

Brew Recipe

To get the best out of this coffee we always recommend this recipe as a stating point

  • Brew with a 1:16 ratio (one gram of coffee to every 16 grams of water).
  • Get your Water as HOT as you can.
  • Adjust your grind for a 3-4 minute brew time. (The finer the grind, the longer it will take to brew)
