This year we are excited to offer the first harvest of Damian’s Red and Yellow Bourbon plants alongside the Paca’s variety we have offered in years past. Bourbon varieties are known for their heightened, nuanced sweetness, which makes them the perfect companion for the higher acidity Pacas variety. Damian’s desire to continually grow and challenge himself to produce better coffee is one of the reasons we love working with him.
We love Damian’s coffee for its balance and clarity of flavor. This lot has exceptional sweetness, opening with Nectarine, and Dulce de Leche. The creamy velvety texture and caramelized sugar are perfectly balanced by the juicy sweetness of the stone fruit. As the coffee finishes, you are hit with the nuanced citric acidity of Tangerine.
