Our first-ever coffee from Peru! The Sahuayaco comes to us from the Sahuayaco community in the La Convención sub-region, which resides in the southern mountains of Cusco. This part of the country is as beautiful as it is remote, located not too far from Machu Picchu. 


The high altitudes and steep, mountainous terrain creates the perfect microclimates for coffee to thrive. The cooler temperatures up high in the mountains allow for the coffee cherries to slowly ripen and develop tons of complexity, and we are loving the vibrant and balanced flavor profile it creates. Bright and sweet  Meyer lemon leads into the developed sugars of golden raisin, before evolving into the tartness of red fruit carried by a delicate undertone of black tea. An incredible coffee for anyone who lights coffee on the brighter side.

Brew Recipe

To get the best out of this coffee we always recommend this recipe as a stating point

  • Brew with a 1:16 ratio (one gram of coffee to every 16 grams of water).
  • Get your Water as HOT as you can.
  • Adjust your grind for a 3-4 minute brew time. (The finer the grind, the longer it will take to brew)
