The Chacón’s continuously strives to perfect their coffee through experimentation and innovation. This devotion has resulted in the creation of their Diamond processing technique. The secret to this process is the slow drying and rotation of the cherries, which results in a truly unique and vibrant flavor profile, and the Las Lajas Black Diamond is a perfect example of this.
