Tasting Notes: Pink Starburst, Nectarine, Pie Crust 

Carmen’s harvest this year marks a notable jump in the intensity of flavor and clarity in her coffee. It opens with juicy pink starburst and ripe nectarine. This amalgam of candy and stone fruit has a heavy body and velvety mouthfeel. As the coffee cools, the buttery sweetness of pie crust emerges and lingers on your palate. This is a phenomenal coffee that we are so excited for you to try!

This coffee comes to us from our friend, Carmen Canchala, a third-generation coffee and sugar cane grower from the Andean municipality of Ancuya. Located on the hillsides and among the valleys of the Colombian Andes Mountains, this is the sixth year we have received coffee from her farm, Finca La Hoya. Carmen and her family go to great lengths to ensure that their coffee is grown and milled in the best possible environment, growing without the use of pesticides and even going so far as to ensure that no animals or vehicles are allowed near the farm to minimize pollutants.  Her diligence has consistently produced some of the cleanest cups of coffee we’ve had the privilege to offer.

Brew Recipe

To get the best out of this coffee we always recommend this recipe as a stating point

  • Brew with a 1:16 ratio (one gram of coffee to every 16 grams of water).
  • Get your Water as HOT as you can.
  • Adjust your grind for a 3-4 minute brew time. (The finer the grind, the longer it will take to brew)
