Flavor Notes: White Peach, Jasmine Tea, Apple Butter
Delicate stone fruit, subtle florality, and cooked fruit create the wonderfully aromatic Ethiopia Shakiso. Opening with the bright sweetness of White Peach, and enriching its natural florality with the fragrant tones of Jasmine Tea. As it settles into the palate, it rounds out into the smooth, creamy sweetness of Apple Butter. A perfectly balanced cup, perfect for anyone who loves lighter, floral coffees.
This coffee comes to us from Shakiso, a processing station located in central Guji in Ethiopia, surrounded by old-growth forests and coffee producers. This distant and heavily forested swath of land is protected by the Gujii tribe, part of Ethiopia’s vast and diverse Oromo nation, who have for generations organized to remove mining and logging outfits in the fight to conserve the land’s sacred canopy. The extremely remote area is a multiple-day walk from trading centers, making it difficult to capture all the benefits of the country's healthiest biodiversity, as it can be depleted in transit, or result in high-quality lots being blended with lower-quality lots that cannot make the trip.
