This coffee comes to us from Wilson Morales, one of our Best Friends Club members for the last 5 years! With each passing season, the quality of coffee on his farm Finca Aurora has improved in amazing ways. Wilson created this finca using his understanding of a healthy, biodiverse ecosystem has helped him structure the farm; planting native and endangered trees alongside his coffee. The diverse flora on his property acts as companion plants to the coffee, providing shade, and ample pollinators, helping the plants reach their full potential.

Wilson’s coffee is a delight year over year, bringing a wonderful balance of tart juicy characteristics balanced with a heavy body and mouthfeel. This year's harvest hits hard with tons of juiciness up front, reminding us of a yellow Starburst, before that sweetness evolves into tart stone fruit reminiscent of a pluot. The coffee has a heavy, creamy body akin to milk chocolate. This is a great selection for anyone who enjoys a dynamic and juicy single origin.

To get the best out of this coffee we always recommend this recipe as a stating point

  • Brew with a 1:16 ratio (one gram of coffee to every 16 grams of water).
  • Get your Water as HOT as you can.
  • Adjust your grind for a 3-4 minute brew time. (The finer the grind, the longer it will take to brew)
